4 skinless/boneless chick breast 6-8 oz each. 1 1/4 cup panko breadcrumbs on a large plate, 1/3 cup flour on a plate 1 beaten egg in a bowl with 2 tbsp water 4 tbsp olive oil or more lemon cut into wedges

Place a rimmed baking sheet in a 250-degree oven. Pound chick breast flat sprinkle with salt pepper. Toss culets in flour on all sides, dip into the egg mix, and then breadcrumb mix. In a large skillet heat olive oil and cook chicken 2 at a time 3-5 min per side Transfer to baking sheet in the oven. Garnish with lemon

Pan-fried chicken or turkey cutlets referred to as Milanese. Pound to about 1/2 inch thickness or less to cook quickly. Serve with a salad and white wine
