1 c. onion
1 tbsp. minced garlic
1 tbsp. chili powder
1 tsp. salt
1/2 tsp. cayenne pepper
1/2 c. carrot, diced
1/2 c. celery, diced
1/4 c. red bell pepper, diced
2 c. sweet potatoes, peeled & diced
4 c. chicken broth
2 c. cooked chicken shredded
1 can (14.5 oz) diced tomatoes in juice
Garnish: chopped dry roasted peanuts and minced fresh cilantro

Directions:
Directions:
Saute onion, garlic, and seasoning in 2 tbsp. oil in large pot over medium heat. Cook until onion is slightly softened, about 5 minutes.
Add carrot, celery, bell pepper, and sweet potatoes; saute 2-3 minutes.
Stir in broth, chicken, tomatoes, and peanut butter. Bring to a boil, reduce heat and simmer 10 minutes, or until potatoes are tender.
Garnish with cilantro and peanuts.
