Directions:
Dice potatoes. boil potatoes in water with a pinch of salt until little tender. Cook bacon, a bunch of garlic, and a small onion cook until soft and golden then start the roux, add half a stick of butter to pan then the 1/4 cup flour then add the liquids 2 cups warm milk, 2 cups chicken broth, salt & pepper to taste (I like a lot of pepper.) Then I cook for 10 min stir often start chopping fresh parsley( I like a lot,) throw in, cover cook 10 minutes more. Taste Then add 1 cup a shredded cheese I did Monterey jack.. but you could do a sharp cheddar, then I added 2/3 heavy cream, you could also do 1/2 sour cream.
