2 cups beef broth
1 can tomatoes and green chilies
1 small onion, chopped
5 small mushrooms, sliced
2 small zucchinis, sliced
1 medium yellow squash, sliced
1 tsp. salt
Grated Monterrey Jack cheese to serve

Cook over medium-low heat until vegetables are done. Sprinkle a little Monterrey Jack cheese on top, if desired.

Los Cucos Restaurant in Seguin has the best Tortilla Soup I have ever eaten. I love all the vegetables in it. This is my best attempt at copying theirs.
