Ingredients: Pancakes: 6 Eggs 1C. All-Purpose Flour 2T. Sugar 1C. Milk
Apple Topping: ¼C. Margarine 1T. Cornstarch, mixed with 2T. cold water ⅓C. Brown Sugar, Packed 1tsp. Ground Cinnamon 3 Medium apples; cored, sliced ½C. Light Sour Cream 2T. Powdered Sugar

Directions:Preheat oven to 400º. Spray a 10-inch round oven-safe skillet with nonstick cooking spray.
Pancake: 1. Beat the eggs. Mix in the flour, sugar and milk.
2. Pour the mixture into the pan and bake for 15 minutes. Reduce heat to 325º, and bake for 40-45 minutes more. Remove immediately and cut into wedges.
Apple Topping: While the pancake is baking prepare the apple topping.
1. Melt the margarine in a skillet and add the cornstarch mixture, brown sugar and cinnamon. Stir until thickened.
2. Add the apples and cook until crisp-tender.
3. Spoon apple over the top of pancakes.
4. Combine the sour cream and powdered sugar. Add a dollop to each serving.
5. Serve |
