½ medium bell pepper, green
1 onion, yellow
2 oz. ham, lean, reduced sodium
2 T. butter
3 medium eggs(1 whole, 2 whites)
2 oz. cheddar cheese, low-fat
⅛ tsp. black pepper
4 whole wheat tortillas
4 T. salsa

Directions:
Directions:
1. Wash bell pepper and onion; peel onion. Chop bell pepper and onion finely. Chop ham. Set aside.

2. Melt the butter in a non-stick skillet over medium-low heat.

3. In a medium bowl, whisk the eggs with the bell pepper, onion and ham.

4. Pour the mixture into the skillet and cook, stirring, until eggs are set to desired firmness, about 1½-2 minutes.

5. Sprinkle with cheese and season with black pepper.

6. Dividing the egg mixture evenly, place it down the center of each tortilla; sprinkle each with 1 T. salsa.

7. Roll up each tortilla burrito style and serve

I like to enough of these to have for breakfast all week and wrap them in saran wrap and foil individually to pull out for a quick breakfast before work.
