25-30 Chocolate Cookies
2 tablespoons Butter, melted
1 package Lime Gelatin
1/2 cup Hot Water
1/4 cup Lemon Juice
1/4 cup Sugar
1 tall can Evaporated Milk (chilled in freezer)
1 teaspoon Lemon Rind
6 drops Green Food Coloring

Directions:

Butter a large pan. Line sides with 12 or more cookies. Crush remaining cookies, mix with butter place on bottom of pan, saving some for topping. Dissolve gelatin in hot water. Add lemon juice and sugar and let stand while whipping canned milk to a stiff froth. Add gelatin mixture to whipped canned milk and continue whipping until stiff peak is formed. Mix in lemon rind and food coloring. Pour over cookies crumbs, sprinkle crumbs on top. Chill at least 4 hours.
