Ingredients:
2 quarts berries, washed, drained, and hulled
½ cup water
1 cup sugar
2½ tablespoons thickener
1 tablespoon butter
few drops red food coloring

Directions:
Directions:
Crush 2 cup of strawberries. Add water, sugar, thickener to crushed berries. Simmer and stir about 2 minutes until thick and clear. Add butter and food coloring to glaze. Put through fine strainer & cool about 15 minutes. Pile remaining berries into the baked pie shell. Spoon on glaze.

There are tricks to making the sparkling glaze. Cornstarch, potato starch or arrowroot can be used to thicken the glaze. Th latter two make the glaze somewhat clearer. It is important to cook cornstarch glaze until it looses its milky appearance to prevent the pies having a cloudy film.
