4 large sweet potatoes
2 Tbsp. extra virgin olive oil
1 tsp. sea salt
1 tsp. pepper
1/4 c. chopped fresh parsley
1/4 c. dried cranberries
1/4 c. raisins
1/4 c. sunflower seeds
3 chopped green onions

DRESSING
2 Tbsp. extra virgin olive oil
2 Tbsp. vinegar
1 Tbsp. Dijon mustard
1Tbsp.honey
1 Tbsp. lemon juice

Pre-heat oven to 400º.
Peel potatoes and cut into bite size pieces. Toss with olive oil, salt and pepper.
Roast in a baking dish for 20-25 minutes. Let cool to room temperature.
Whisk dressing ingredients together and set aside.
Add cranberries, raisins, sunflower seeds and green onions to cooled sweet potatoes.
Pour dressing over and toss all ingredients gently. Garnish with chopped parsley.

Can be served chilled or at room temperature.
