12 egg yolks
1 tbsp. salt
2+ cups of flour

Directions:

1. Beat egg with a fork
2. Add a little flour at a time
3. When it gets stiff, work it in with your hands.

Note: It takes about 2 cups of flour plus, depending on the size of eggs.

4. After making the pasta dough, roll it out so that it's very thin.
5. Cut into four to eight sections
6. Cover with a linen dish towel and let it stand for 2 hours
7. Stack the sections.
8. Using a very sharp knife, slice the stacked sections into very thin (almost shaved) strips.
9. Cover with linen dish towel again and let it set for 1 hour

To cook them for the meal:
1. Bring chicken broth or beef broth to a boil in a large pot.
2. Add the shaved pasta to boiling pot of broth
3. Cook for about 15 minutes or until desired doneness.
