1 T butter
1 onion chopped
1 clove minced garlic
1 potatoe peeled and diced or 1 cup of cooked rice
¼ t each of salt, pepper and dried thyme
4 cups veggie stock
3 cups of chopped broccoli
2 T plain yogurt or light sour cream

Directions:
Directions:
In a saucepan, melt butter over medium heat; fry onion, garlic, potatoe, s&p and thyme until onion is softened about 5 minutes. (If using rice do not add rice at this time) Add stock and bring to boil; reduce heat, cover and simmer until potato is tender about 10 minutes.

Add broccoli (and rice) simmer until hot, about 5 minutes. In batches, transfer to blender and pureé until smooth.

Garnish with a dollop of yogurt into each serving.

Makes 4 servings
