1 lb. spicy Italian ground sausage
8 slices bacon
4 Tbsp. butter
1/2 onion, diced
1 Tbsp. minced garlic
6 C chicken broth
1 C water
4/5 yellow potatoes, cut into 1 inch pieces
3 tsp. salt or to taste
1 tsp. pepper
2 C heavy cream
4 C. chopped kale or spinach
Parmesan cheese

Directions:
Directions:
Saute sausage and bacon until brown. Drain. In large pot, add butter and garlic and saute onions over med. heat until translucent. Add chicken broth, water, potatoes, salt and pepper and bring to a boil. Boil until potatoes are tender. Stir in kale and heavy cream. Add sausage and bacon. Simmer for about 30 mins. Salt and pepper to taste. Serve sprinkled with Parmesan cheese.

I can't wait for this Pandemic to end. I need a fix of Olive Garden's all you can eat soup, salad and bread sticks. This recipe is a close second to Zuppa Toscana at Olive Garden.
