1 T Olive Oil
mushrooms
broccoli
onion
zucchini
cubed potatoes
peppers
any veggie of your choice, great for leftovers
12 eggs, beaten with splash of milk
shredded cheddar cheese, or mexi blend

Directions:
Directions:
Saute your choice of vegetables in olive oil in oven safe pan. Cook until tender, but not mushy. Pour beaten eggs over the veggies. Cook on medium until bubbling up, and cooked halfway through. Place pan in oven under broiler. Watch carefully as this will go fast. Remove from oven when eggs are set. Cover with shredded cheese, and place back under broiler until melted. Cut into pizza sliced wedges, and serve. Great packaged up to reheat in microwave for 3-4 days.
