4-5 lbs. of bone in pork shoulder
½ cup brown sugar
2 T paprika
1 T onion powder
1 t coriander
1 t cummin
1 T dry mustard
2 T course salt
½ t cayenne pepper
1 T garlic powder
1 T black pepper

Directions:
Directions:
Place pork shoulder in deep roasting pan

Mix all ingredients in a mixing bowl and whisk together reserve 2 T for later

Then rub remaining spice mix all over pork

Cover roasting pan wth tightly foil to seal in juices.

Place in oven at 250º F Bake in oven until meat is tender and falling off bone, about 5-6 hours.

Meanwhile make sauce:
Combine:
1 cup ketchup
1 ½ cups apple vinegar
½ cup brown sugar
Reserved spice mix
Or...buy a good bottle of bbq sauce (there is always an easy way)

Bring to boil in saucepan, medium heat, reduce to simmer; cook uncovered about 25 minutes. Shred pork, skim off fat from juices, mix pork juice, sauce and toss with shredded pork.

Serve with kale coleslaw (thinly chopped kale and cabbage, mix with coleslaw sauce and add some poppy seeds.)

Serve in toasted bun or bagette.
