2 tsp. baking powder
½ tsp. salt
3 large eggs
1 c. sugar
1 c. sour cream or Greek yogurt
½ c. canola oil
2 tbsp. lemon zest
1-2 tbsp. lemon extract

Glaze:
¾ c. to 1 c. powdered sugar
1-2 tbsp. milk

Preheat oven to 350º. Grease a 9x5 loaf pan and line with parchment paper. Whisk together flour, baking powder, and salt, set aside. In a large bowl, whisk eggs, sugar, sour cream, and oil until smooth and combined. Add lemon zest and lemon extract, whisk together. Add dry ingredients, mix until just combined, do not overmix. Pour batter into loaf pan and bake 50-60 minutes. To prevent overbrowning tent the pan with foil for the last 10 minutes of baking. Let cool. In a medium bowl, mix together powdered sugar and milk until smooth, drizzle over bread.
