2¼ cup flour
1¼ cup plus 3 T. oatmeal
¾ cup packed brown sugar
½ cup dates or raisins
4 tsp baking powder
½ tsp baking soda
½ tsp cinnamon
¼ tsp ginger
⅛ tsp cloves
¼ tsp salt
½ cup frozen concentrate apple juice thawed
⅓ cup vegetable oil
¼ cup water
4 egg whites
1 cup shredded carrots

1. Lightly oil 8x4 or 9x5 inch loaf pan.
2. Bake at 350ºF for 1 hour and 10 minutes.
