Baked Breaded Fish Recipe

-4 slices of bread of your choice torn into smaller pieces
-2 tbsp. salted butter, melted
-¼ tsp. black pepper
-2 tbsp. parsley
-garlic pepper to taste
-¼ cup all purpose flour
-5 tbsp. all purpose flour
-2 large eggs
-3 tbsp. mayonnaise
-½ tsp. paprika
-¼ tsp. cayenne pepper
-4 pieces of white fish of your choice (I use cod)

1. Preheat the oven to 350º.

Preparing the breading
1. Pulse bread, butter, and pepper in food processor until crumb size.
2. Place mixture onto baking sheet and bake until golden brown (stir twice during this time), then let cool.
3. Transfer crumbs onto a plate and stir in the parsley and garlic pepper.
4. Increase oven temp to 425º
5. Place ¼ cup of flour onto a second plate.
6. Whisk together the eggs, mayonnaise, paprika, and cayenne on another plate.
7. Stir in the 5 tbsp. flour into the egg mixture.
8. Dry fish fillets with paper towel.

Bread the fish
1. Dredge a fillet in flour, shake off the excess.
2. Dip the fish in the egg mixture.
3. Coat all sides of the fish with the breadcrumbs and gently press crumbs onto fish to make sure they stick.
4. Place fish on greased pan, and repeat with the rest of the fish.

Bake and serve
1. Bake breaded fish for 18-25 minutes or until flaky.
2. Serve and enjoy!
