2 lb. diced chicken 1 lb. sliced andouille sausage 1/4 cup veg oil 2 cups chopped onion 2 cups chopped celery 2 cups chopped green bell peppers 2 tbsp chopped garlic 2 cups crushed tomatoes 7 cups chicken stock 4 cups uncooked white rice salt pepper hot sauce of choice

In a 2 gallon Dutch oven over med heat oil and add chicken. cook about 20 min set aside . Add in pan sausage celery onion garlic bell pepper saute about 15 min. Return chicken to the pot add tomatoes cook while stirring about 5 min. Now add chicken stock bring to a boil add salt pepper hot sauce cook another 10 min. Add rice and reduce heat to low and cook 30-40 min,.
