5-6 medium potatoes, peeled and cubed
4-5 eggs, hard boiled for 10 min, then sit in cold water to cool
1 onion, diced
3-4 ribs celery, diced
mayo
squirt of mustard
pickle juice
Salt & Pepper
Roasted Garlic Seasoning
Paprika

Optional stir in's or toppings:
sliced black olives
chopped green onion
dill weed
bacon crumbles

Directions:
Directions:
Boil potatoes until fork tender, but not falling apart. Drain, and let cool. If potatoes are added while still steaming you will find the potato salad gets watery later. Peel eggs, and chop. Combine all ingredients in a bowl, combine with enough mayo to make it moist. Season as desired. Use optional ingredients for loaded baked potato salad, or just 1 or 2 of your choosing to make it special or different each time.
