12 ozs. Fettuccine
1 cup chopped bacon
2 puts. multi-colored cherry tomatoes
2 shallots thinly sliced
2 garlic cloves
3 large egg yokes
2 ozs. Parmesan cheese, grated 1/2 cup
3 tbsp fresh chives
1/2 tsp. Black pepper

Directions:
Directions:
Cook pasta according to instructions, drain reserving 1 cup of stock.cook bacon in a skillet until brown (5-6 minutes). Drain bacon. Reserve 2 tbsp. drippings. Add tomatoes to drippings in skillet. Cook until slightly soft, about 3 minutes. Add shallots and cook stirring often until soft, 3-4 minutes. Add garlic and cook for 1 minute. Add 1 cup of reserved stock. Remove from heat. Stir in pasta and add egg yokes 1 at a time until thoroughly combined. Top with additional Parmesan cheese and serve.
