½ cup sugar
6 Tbsp unsalted butter, melted
6 egg whites
8 egg yolks
Grated rind of 2 lemons
Juice of 1 lemon

Directions:
Directions:
1. Beat the sugar and melted butter together.
2. Beat the egg whites and egg yolks separately.
3. Add the egg whites and yolks, and the lemon rind and juice, to the sugar and butter. Mix well.
4. Pour into a prepared pie crust or tarts, first sprinkling the pastry with a bit of sugar.
5. Bake 30 minutes at 400ºF for pie, 20 minutes for tarts.
