2 cups flour
3/4 cup sugar
2 tsp baking powder
1/2 tsp salt
1 TBSP pumpkin pie spice
1 cup pure pumpkin purée
1/4 cup oil
1 tsp vanilla
1/2 cup milk
Streusel:
1/4 cup unsalted butter, melted.
Pinch of salt
1/4 cup flour
1 cup brown sugar
1 TBSP cinnamon

Directions:

Preheat oven to 350º. Spray 9 X 9" pan with cooking spray.
Mix 2 cups flour, sugar, baking powder, salt, and pumpkin pie spice in large bowl. Whisk to combine. Stir in pumpkin, oil, vanilla, and milk until mixed. Pour into dish and set aside.
In a small bowl, mix melted butter with 1/4 cup flour, brown sugar, cinnamon, and salt. Stir with a fork to combine. Spread on top of pumpkin cake.
Bake 30 - 40 minutes or until toothpick inserted comes out clean.
Store covered on counter for up to 2 days or freeze up to a month.
