Dressing: In a blender
1 C oil
¾ C sugar
2 cloves garlic
½ tsp paprika
½ C red wine vinegar
½ tsp salt
½ tsp pepper

Salad:
Spring salad mix (or baby spinach)
sliced strawberies
Monterey Jack (cut into cubes)
Candied Pecans

Directions:
Directions:
For dressing add all ingredients and blend together.

To candy Pecans add about ⅓ C of sugar and a handful or Pecans to a medium heat pan. Watch these carefully. Stir continually. The sugar will start to melt, keep stirring don't take off heat just yet. Stir a little longer until more of the sugar had melted and stuck to the Pecans. then remove onto a glass plate and let cool.

Assemble salad by adding spring mix, cheese, pecans, and strawberies to bowl. Top with dressing. Enjoy!

FALL VERSION:
For Fall salad use candied slivered almonds, dried cranberries, canned madarins, and feta cheese
