10 eggs
1/2 cup flour
1 teaspoon baking powder
1 pint cottage cheese
2-3 cups Monterey Jack cheese
1/4 cup butter, melted
1 small can diced green chilies
1-2 cups diced ham or bacon bits (only 1 cup if using bacon) or substitute bacon bits, breakfast sausage or veggies

Beat eggs until light and fluffy. Add remaining ingredients and pour into greased 9x13 dish. Bake at 350º for 40-45 minutes.

* This casserole is so versatile, you can add any other ingredients you like. I usually make one dish with ham one and another dish with veggies--onion, bell pepper, mushroom, zucchini and Swiss cheese instead of Jack. Kids also like bacon or sausage mixed in as well. This is easy to make ahead or make the night before and pop into the oven.

I got this recipe from a friend, and I use it all the time. Christmas morning tradition and if we ever have company because it can all be made up the night before. It's always a crowd pleaser and leftovers are great. Also, it freezes well. I have cut this up and individually frozen them. Kids can grab and re-heat before school or seminary and have a filling breakfast.
