Enough potatoes for as much potato salad as you need.

chopped hard-boiled eggs (start with a dozen if you're serving a crowd)
chopped green onions
bacon 1/2 pound or more (Don't skimp on Bacon and save the grease!)

Sauce:
Mayonnaise
milk
grated parmesan cheese (the kraft powdered kind, not fresh)
salt and pepper.

Use enough potatoes for as much potato salad as you need. Boil them, cool them, peel them, and cut them into chunks.

Add chopped hard-boiled eggs and chopped green onions.

Cut bacon into pieces (kitchen shears work great), fry until crisp. Add fried bacon to
potatoes, for extra flavor and moisture, pour some bacon grease over potatoes and let it soak in. (Don’t skimp on the bacon, I usually use about ½ pound, more if I am making a large amount.)

Sauce:
Mayonnaise, milk, grated parmesan cheese (the kraft powdered kind, not fresh),
salt, and pepper.
Make as much sauce as you need to mix with the potatoes. I use a lot of
cheese and a lot of pepper but do it to your taste.
Also, I add enough milk to make the sauce kind of runny because I like my potato salad on the wet side.
Pour sauce over potato mixture and mix well. If you think you need more sauce just make some more and add it.
As you can tell, this is not low calorie potato salad but that’s why it is good.

This recipe is from my sister in law, Debbie Whitaker.

She says she doesn't measure ANYTHING. She just makes it as she goes along. She tells me there's no wrong way to make this. Have fun, and use your taste buds. So funny.

The secret to this salad is the bacon grease. Use it all. And don't feel bad about it. It's good!
