3 tsp Salt
3 tsp Coarse Black Pepper
3 Tbsp Olive Oil
6 Boneless Chicken Breasts, 6 - 8 oz each
1/2 C Marsala Wine
3 C Heavy Whipping Cream
1 C Flour
2 Tbsp Dried Parsley
1/2 C Chicken Stock
1/4 C Fresh Parsley
1 C Sliced Mushrooms
1 C Sliced Yellow Onion

Directions:
Directions:
Mix the flour, salt, pepper, and dried parsley. Roll chicken in the mix and cover completely. Heat 2 Tbsp oil in skillet over medium heat. Cook chicken; set aside.

Sauté onions and mushrooms. Season with 1 tsp each salt and pepper. When vegetables are soft, add Marsala and burn off alcohol. Heat whipping cream and chicken stock in a sauce pan. In another bowl, mix 1/4 C cornstarch with 1 1/2 C cold water. Mix together slowly until thick. Combine sauteed vegetables, cream sauce, and cornstarch mixture. Ladle over chicken. Garnish with fresh parsley.
