1 lb Dice pancetta
6 large garlic cloves
4-5 eggs
2 cups of shredded parmesan cheese
linguine pasta

Directions:

1. Set a large pot of salted water to boil

2. In a large pan, with olive oil, sauté diced pancetta over medium heat until crisp

3. Mince garlic cloves

4. Beat eggs in a small bowl. Add 3/4 of the shredded cheese mix to eggs

5. When pancetta is crisp, add garlic and sauté for an additional minute. Move pancetta/garlic mix to a large serving bowl.

6. When water reaches a rolling boil, add pasta and a splash of olive oil and cook until pasta is al dente (slight firmness to bite, but soft). Do NOT drain. Using tongs, add dripping wet pasta to bowl with pancetta/garlic.

7. Immediately add egg/cheese mix to hot pasta and toss with tongs for 1-2 minutes. Pasta must be hot enough to cook, but not curdle, the eggs.

8. Serve with remaining cheese on top and garnish with dried oregano
