Brine:
1 cup sugar
2 cups vinegar
2 cups white port whine
1 T. pickling spice

Directions:
Directions:
1. Clean and fillet and cut in small pieces. Soak in salt water (enough to float an egg) for 24 hours, drain, wash off.
2. Soak in white vinegar for 24 hours, drain vinegar.
3. Bring brine to a boil- cool and pour over fish with layers of onions.
