2 heads red cabbage 1/2 lb lean ground beef 2 cups cooked rice 1 egg beaten 2tbsp lemon juice parsley chopped, salt/pepper 1/2 tsp ground ginger 2 tbsp butter 1/2 cup beef broth 2 cups fresh tomatoes, peeled diced.

Remove core from cabbages loosen leaves under running water put leaves into boiling salted water 3 min. Mix cooked beef ,rice eggs lemon juice parsley salt/pepper and ginger in a bowl. Place 2-3 tbsp mixture onto center of each leaf. Fold corners to make rectangle Roll up and secure each with toothpick.Cook in a pan with butter to brown all sides. Place in a casserole dish. Stir broth and tomatoes into pan bring to boil and then pour over cabbage rolls. Cover and bake at 350 degrees for 1 hour.
