1 lb. ground turkey
1 pkg Taco season (or 3 T of taco seasoning)
1 4oz can diced green chilies
1 15oz can whole kernel corn drained
1 4oz can sliced olives drained
1 16oz of cottage cheese
2 c shredded Mexican cheese blend (cheddar & Jack)
1 pkg corn tortillas
Directions:
Directions:
Brown and drain ground turkey.
Add taco seasoning and cook according directions on packet.
Once turkey is seasoned, add corn, green chillies, olives to the mixture and heat thru.

Then layer the lasagna in 9x13 pan:
2-3 corn tortillas on bottom layer, then
layer cottage cheese, then
sprinkle layer of shredded cheese, repeat with tortilla for 2nd layer

Finish with corn tortilla and shredded cheese on top (green chilies can also be added to top layer)
Bake @ 350 degrees for 45 minutes

Optional toppings for serving: Salsa, sour cream, olives, guacamole, green onion

I threw this together one day when I was in a hurry and looking for pantry items. IT has become a family favorite and is so easy. It freezes great, and a lot of times I will assemble everything in the morning or night before and then just throw in the oven to bake at dinner time. Left overs are just as yummy!
