3-4 lb chicken cut into 8 pieces, 4 tbsp olive oil 6 oz. 1/4 inch thick Jamon serran or other flavorful ham diced, Sofrito ,made with green bell pepper cut into thin slices( See below) 1/2 cup dry white whine 2 tbsp chopped parsley

In a large casserole dish heat 2 tbsp oil , cook chicken in batches and set aside about 10 min per batch, add oil as needed. Add ham to pan or dish and cook 2 min.set aside with chicken. Add sofrito to pan with wine and salt /pepper tp taste. Return chicken and ham to pan turn heat to med, partially cover pot and simmer 25 min. Stir a couple times. serve with parsley.

From the Aragon region of Spain. Sometimes lamb is substituted . Sofrito is a mix garlic onions peppers tomatoes chopped well and cooked in a white wine.
