9 onions julienne
1 oz granulated sugar
1 oz smoked paprika
1 shake of thyme
1 oz worschester sauce
1/2 pound beef base
21/2 gallon water
1/4 bottle dry sherry
1 pk auj jus mix
Directions:
Directions:
Add onion, smoked paprika, sugar, salt and pepper to onions on sheet tray. Roast at 350 degrees till caramelized

Add onion and remaining ingredients in large stock pot

Reduce on low by 20%

House Flour:
70% corn flour
30% flour

Mix till consistent
