Ingredients: 3 medium yams 1 butternut squash ½ cup green onion finely chopped s&p to taste cheese sauce package in your gravy section at you local grocery store lol! 1 cup grated sharp cheddar 1 cup any cheese you want to use up in fridge or parmesan/mozza etc... Mix the two kinds of cheese together and set aside.

Directions:Peel and core butternut squash and yams. Cut yams in half and butternut into big chunks so that you can grate them once cooked.
Bring a big pot of water to boil and throw the yams and squash into the H20.and let boil for about 15 minutes, don't over cook or is will turn to mush and you won't be able to grate it.
Once cooked, drain and cool. Then grate the veg into a bowl.
Meanwhile make your cheese sauce. Follow package directions.
Add cheese sauce, s&p, green onion to yams and butternut squash and 1 cup of the grated cheese mixture. Mix really well until blended. Pour into a greased oven proof dish and then sprinkle the other cup of cheese over the mixture.
Freezes very well or bake in the oven at 350 until hot and golden. |
