2 white onions
1 red onion
1 oz. of minced garlic
1 oz. of oil
˝ t salt
˝ t pepper
1 t dried basil
1 T thyme
1 cup red wine
2 litres beef stock
slice of bagette
2 T mozza cheese

Directions:
Directions:
Cut onions in half and remove peel, use a mandolin to cut them thinly if you don't have one use a sharp knife and slice them thinly, not your fingers!

Put oil and onions in a medium pot and add minced garlic, black pepper, dried basil and thyme.

Sauté on medium heat stirring occasionally until onions are cooked and translucent.

Then add red wine and let cook for 5 minutes.

Add beef stock and let cook for another 15 minutes on low heat.

Pour into oven proof ceramic bowl, place a slice of bagette on top of soup and sprinkle with mozzarella cheese.

Broil in oven until cheese bubbles and is golden brown.
