1 lb ground sausage of your choice
1 bag of Southwest flavored hash brown potatoes
12 eggs
1 can diced green chilies
Milk
Salt & pepper to taste
2 bags of shredded cheddar cheese

Directions:
Directions:
Preheat oven to 350º.
Brown the hashbrowns according to the directions on the package. Once cooked, place on the bottom of a sprayed 13 x 9" baking dish. Cook and drain the sausage. Layer it on top of the hash browns. Combine eggs with a splash of milk, green chilies, and salt & pepper. Pour gently on top of the sausage and hash browns. Cook for 30 minutes. Top with cheese and return to oven for 10 more minutes or until the cheese is melted. May be prepared and refrigerated the night before, ready to go in the oven.

This casserole has all the food groups in it. This is not spicy and can be kicked up with salsa or hot green chilies. Serve with fruit or fresh orange juice.
