4 ripe bananas
1 c sugar
2 eggs, beaten
1 tsp vanilla
½ c vegetable oil
2 c flour, 1 c can be whole wheat
1 tsp baking soda
½ tsp salt
¾ c chopped walnuts or pecans -optional

Directions:
Directions:
Preheat oven to 350º.
Grease inside of a loaf pan with shortening.
In a large bowl, mash bananas.
In a separate bowl, beat eggs and then add to mashed bananas.
Combine sugar, oil and vanilla to the banana mixture.
Stir together dry ingredients and add to banana mixture. Mix well. Add walnuts if desired.
Pour into prepared loaf pan.
Bake 50-60 minutes or until a toothpick inserted in center comes out clean.
Note:
This simple banana bread recipe can be made into muffins by pouring the batter into a muffin tin, ¾ of the way full. Baking time will be significantly less and will vary-- Check on banana bread muffins at 15 minutes and test for doneness with a toothpick in the center until it comes out completely clean.
