2 C brown rice, cooked
½ C onion, finely chopped
3 eggs
1 T + 1 t margarine, melted
⅓ C evaporated skim milk
1 pinch salt
1 pinch pepper
2 C cooked spinach, drained
2¼ oz. swiss cheese, shredded
1 tomato, sliced thin

Directions:
Directions:
Combine rice, onion, 1 egg and margarine.
Press into bottom and up sides of sprayed 10" pie pan.
Beat remaining 2 eggs, milk, salt, pepper, spinach, and cheese.
Pour into rice crust.
Arrange tomato slices around edges.
Bake at 350º for 30 minutes.
