2½ lb. beef eye of round roast
1 clove garlic, cut into slivers
2 Tbs. cracked black pepper
1 Tbs. kosher salt
1 Tsp. dried thyme

Directions:
Directions:
Preheat oven to 400º

Using small knife cut several slits in meat; insert garlic. Combine pepper, salt and thyme; coat meat with mixture.

Place meat in shallow roasting pan. Roast until internal temperature registers 140º on meat thermometer (about 45 minutes). Let rest 10 minutes before slicing. Makes 8 servings.

Perfect entertaining meal. Serve with roasted potatoes and vegetables.
