3 TBSP oil
2 Large Chicken Breasts, cubed.
2 XL Carrots, grated
1 Large Onion, finely diced,
1 TBSP Salt (to taste)
1 Tsp Cardamom (is a must)
1/2 Tsp Black Pepper
1/2 Tsp Allspice
1.5 cups washed rice

Directions:
Directions:
- In a Frying Pan, on high heat, preheat 2 TBSP of oil, add the chicken in batches and fry until just when it gets golden, then take it off and place it in a medium sized pot.
- add the last TBSP oil, add the onion and carrot and fry them until soft, mixing continuously (approx 5 mins)
- Add onion and carrots above the chicken, and mix it together, adding the Cardamom nutmeg, pepper, allspice and salt
cover it all with the rice, add boiling water slowly to not mix the ingredients around,
Place pot over heat and cook covered until boiling.
after 5 minutes, lower the heat and leave to cook until the rice cooks, (15 mins)

this meal can be cooked in a microwave, first lightly fry the chicken and vegetables, then add them to the microwave rice cooker, after that add the spices water and rice, and cook for 15 mins as per cooking the rice
