2 Tbsp butter
2 Tbsp onion, minced
2 Tbsp flour
2 cups milk
1 tsp salt
1/8 tsp pepper
1/8 tsp paprika
4 cups sliced uncooked potatoes

Directions:
Directions:
Melt butter in a saucepan, saute the onion.
Stir in the flour, when well combined add the milk.
Cook and stir constantly until sauce is smooth and thickened.
Add the seasonings. Put 1/2 of the potatoes in a buttered 1 1/2 quart casserole dish.
Pour 1/2 of the sauce over the potatoes. Repeat with the sauce and potatoes.
Bake at 350º for 45 minutes covered. Remove the cover and bake for 1/2 hour more.

This scalloped potato recipe is from my high school home economics class. It has been in my recipe box for decades, but it looks like a good one so in the cookbook it will go.
