2 large Roma tomatoes, chopped

2 14.5 oz cans of plain diced tomatoes, no seasoning

2 jalapenos seeded and chopped

2 tbsps fresh lime juice (can also use lemon or red wine vinegar, but lime is best)

1 tbsp cumin

4 garlic cloves, minced

1 large white or brown onion, chopped

1-2 tsp salt (I use 1)

1/2 tsp cayenne pepper or red pepper flakes

1/3 cup cilantro ( big note here, original recipe says this is one of the key pieces to recipe, I disagree. No cilantro in mine and everyone loves it)

Not part of original recipe, but when I have it, I also add Green chile

Place all ingredients in blender in the order listed. Blend until all the ingredients are well mixed and the salsa has a consistent texture. You can eat it immediately, but it will taste better if you refrigerate for 30 minutes. You can make this hotter by adding more jalepenos or throwing in some other types of peppers. This salsa does not last in our house.
