3 whole eggs
3 egg yolks
1¼ c. sugar
⅛ t. salt
Dash ground nutmeg
½ c. freshly squeezed lemon juice (about 3 lemons)
¼ c. butter, melted
1 t. grated lemon rind
Baked tart shells (8 -9)
Whipped cream (optional)

Directions:
Directions:
Beat eggs, egg yolks, and sugar in small bowl until thick and pale yellow. Beat in salt and nutmeg. Gradually add lemon juice, then melted butter. Stir in rind and pour into top of double boiler. Cook over simmering water, stirring constantly, until mixture thickens, about 12 - 15 minutes. Cool and pour into baked tart shells. Serve at room temperature or chilled. If desired, top with whipped cream, flavored or plain. (A bit of orange liqueur added to slightly sweetened whipped cream is good!)
