14 – 20 oz. fresh pre-cooked chow mein or Shanghai noodles
1/2 cup unsalted butter or neutral flavor cooking oil
15 cloves minced garlic
1 tablespoon fish sauce
1 tablespoon oyster sauce
1 tablespoon sugar
1 teaspoon Maggi seasoning
1 tablespoon Calabrian chili sauce
1/4 cup parmesan cheese or as much as you want

2 tablespoons olive oil
1/2 cup chopped onion
1-2 cups of shrimp heads and shells
4-5 lifer lime leaves rough chopped
2 tablespoon rough chopped ginger
1 tablespoon rough chopped turmeric
1 tablespoon rough chopped galangal
1 tablespoon Thai sweet chili sauce
2 cups chicken or vegetable stock

In a large sauce pan, add olive3 oil and onions on medium heat. Once onions are soft, add shrimp heads and shells and stir for 1 minute. add all remaining ingredients except for chicken stock and sauce for 5-10 minutes. Add stock and simmer for 30-45 minutes. Strain stock and reserve.

Bring a small pot of shrimp stock to boil over a stove. Add in fresh chow mein noodles and with a fork, gently stir the noodles until they separate. It should take about 2 minutes. let them absorb shrimp stock adding more if needed. simmer for 5-7 minutes if noodles are fresh.

In a large sauce pan or wok, heat butter or oil. If using butter, heat the pan on low heat in order not to burn the butter. When the oil starts to shimmer or the butter has melted, add in minced garlic. When the garlic starts to brown and become fragrant, add in fish sauce, oyster sauce, sugar, chili sauce and Maggi seasoning. Then add the noodles and stir for a minute to combine.

Turn off heat and add parmesan cheese to the noodles. Stir well. Serve while hot.

Note: If you are using dry or uncooked noodles, follow the cooking directions on the package. There are SO many different noodles at the Asian grocery store!
