2 tbsp. olive oil
6 scallions or green onions - white and light green parts only, chopped

8 oz. sliced fresh mushrooms
2 cloves garlic, minced
1 red bell pepper, finely chopped
2 cups broccoli florets, chopped
8 cups bread cubes
2 ½ cups shredded sharp cheddar cheese or Monterey Jack cheese
8 large eggs
2 ½ cups 2% milk
1 tbsp. Dijon mustard

In a large skillet, heat olive oil and sauté scallions and mushrooms for about 5 min. Add garlic, red bell pepper and broccoli. Cook, stirring often until vegetables are tender, about 5 min. Transfer to a bowl & season with salt and pepper.

Spray 9x13 baking dish with cooking spray. Arrange bread cubes in pan. Scatter vegetables over bread cubes and sprinkle with 2 cups cheese.

Whisk together eggs, milk and mustard. Season with salt and pepper. Pour over mixture in baking dish. Cover with plastic wrap and refrigerate at least 4 hours or overnight.

Let stand at room temperature about 30 min. before baking.

Preheat oven to 375º. Remove plastic wrap from baking dish and cover with aluminum foil. Bake for 30 min. Remove foil and sprinkle with remaining 1/2 cup cheese and bake until golden and just set in the center - about 20-30 min. longer.

Let stand 10 min. before serving.
