1 lb. fresh green beans, trimmed
1 tbsp. unsalted butter or vegetable oil
1 medium onion thinly slices or 1 large garlic clove crushed
1 8-oz container sour cream
1/4 cup flour
Salt and pepper to taste
1 1/2 cup extra-sharp cheddar grated
1 cup fresh bread crumbs

Preheat oven to 350 degrees. Grease 9 X 11 inch casserole dish.
Blanch green beans in boiling water for about 2 minutes (should be very crunchy)
Heat butter or oil in large skillet and sauté the optional onion or garlic for about 5 min.
Remove from heat and stir in beans.

In a small bowl, mix sour cream with flour, salt, and pepper until smooth. Stir sour cream mixture into the beans until well combined. Transfer them to the casserole dish; top with cheese and then the crumbs.

Bake for 25 minutes until heated through and browned on top.

Serve hot

I sometimes use onion ring crumbles on top instead of bread crumbs or a mixture of both. This is a big hit with David and John. Even Jeff likes it when I remember to use onion instead of garlic.
