1 large onion, finely chopped
3 large garlic cloves, minced
1 carrot, finely chopped
1 stalk celery, finely chopped
2 Tbs. extra virgin olive oil
2 15 oz. cans tomato sauce
1 Tbs. tomato paste
1 c. water
1 c. dry red wine
3 Tbs. fresh parsley, finely chopped
10 fresh basil leaves, torn
1 Tbs. dried Italian seasoning
1 tsp. sugar
1/2 tsp. crushed red pepper
(optional)
3 bay leaves
Kosher salt
freshly ground pepper
1 recipe Handmade Italian
Meatballs
finely shredded Parmesan cheese

Directions:

1. In 4 qt. Dutch oven, cook onion,
garlic, carrot and celery in hot oil for
15 minutes or until vegetables are
tender, stirring occasionally.

2. Stir in tomato sauce, tomato
paste, water, wine, parsley, basil,
Italian seasoning, sugar, crushed
red pepper and bay leaves.

3. Bring sauce to boiling, reduce
heat. Simmer, uncovered, for 45-
60 minutes or until desired consis-
tency, stirring occasionally. Remove
and discard bay leaves. Season
to taste with salt and pepper.

4. Serve sauce with Handmade
Meatballs (recipe in meat section)
over spaghetti. Sprinkle with
Parmesan cheese.

Ma made the best spaghetti sauce ever but I included this because it was the only spaghetti sauce recipe in her recipe folder so I figured there was something about it that she thought sounded good.
