2 lbs. mashed sweet potatoes
1 small box vanilla instant pudding
1/2 cup brown sugar
2 large eggs
2 tsp vanilla extract
1/2 cup (room temperature) butter
1 tsp ground cinnamon
1 tsp nutmeg or allspice
1 can sweetened condensed milk

Directions:
Boil ‘Tater 35 - 40 minutes. Remove shell, slice into equal sizes, placing into bowl. Mash with fork and remove any black spots.
Add brown sugar and vanilla pudding mix, blend. add eggs, one at a time, blend. Continue to remove black spots. Add cinnamon, nutmeg, vanilla extract, butter sweetened condensed milk, blend.
Pour mixture into deep dish pie shell, but not all the way to the top.
Bake @ 350 degrees for 50 - 60 minutes or until center no longer jiggles.
Allow pie to completely cool before cutting or putting in refrigerator (it will sweat otherwise).
