2 whole chicken breasts (skinless)
3 tbsp vegetable oil
8 oz. fully cooked smoked sausage cut into 1/2 inch slices
3 tbsp all-purpose flour
1 medium yellow onion, chopped
1 small green pepper seeded and chopped
½ cup chopped celery
1 garlic clove minced
½ tsp salt
¼ tsp ground red pepper
¼ tsp black pepper
1 can (16 oz) stewed tomatoes crushed
1 can (13¾ oz) chicken broth
8 oz okra, cut into ½" thick slices or 1 pkg. (10 oz) frozen okra
½ pound medium shrimp
3 cups cooked rice

Cut chicken into 1 inch chunks. In a large sauce pot, heat oil over medium-high heat. Add chicken and sausage a few pieces at a time and cook until brown on all sides. Remove to plate as they brown. Pour off drippings from sauce pot into a cup and add enough oil to measure 3 tbsp. Return oil to sauce pot. Add flour and cook, stirring constantly until mixture is dark brown, about 2 minutes. Remove sauce pot from heat. Add onion, green pepper, celery, garlic, salt, and red and black peppers stirring until all the ingredients are crisp-tender. Return sauce to pot. Gradually stir in the tomatoes and chicken broth, then add the chicken and sausages. Bring mixture to a boil. Add shrimp and reduce heat. Cover and simmer until the chicken is tender (about 15 min.) Add the okra then continue to simmer, covered, for about 5 minutes more. Serve over cooked rice.
