2 lbs. Mussels, cleaned
1 Tbsp olive oil
1 onion sliced or chopped
2 cloves garlic (or powder) minced
1 bell pepper, sliced
1 15 oz can tomatoes
1 8 oz can tomato sauce
1 - 2 tsp Italian seasoning to taste
salt and pepper to taste

Heat olive oil in a large fry pan. Add onion and then bell pepper and cook until onion is transparant and bell pepper is tender. Add tomatoes and tomato sauce, Italian seasonging, salt and pepper (don't oversalt). Cook on medium for 10 minutes or more. Add mussels and put lid on. Cook until mussels open. Serve alone in bowls, or over spaghetti.
