Ingredients: 1 lb red kidney beans 3 cloves garlic chopped 3 stalks celery chopped 8-10 cups water ½ cup fresh chopped parsley 3 medium yellow onions chopped 1 ham hock 1 (14 oz) package Polish Kelbasa Cooked white rice enough for 10 people. Follow package directions. cayenne pepper to taste

Directions:Wash beans and place in large pot with water and ham hock and cook for 1½ hours. During last half hour cut up kielbasa into bite size pieces and brown in medium frying pan. When done add to large pot. Also add garlic, celery, onion, and bell pepper and continue cooking ½ hour until tender. When done, cut the meat from ham hock and put the meat back in the pot. Add Cayenne pepper to taste. Serve over cooked rice. |

Notes: When I came home to visit my family in Indiana I loved to make dinner for them. My father loved this dish and nicknamed it Rosey's dish. I taught my sister how to make it so that my Dad would continue to enjoy it when I had to go back to Florida.
